As we transition [slowly] from Summer to Fall here in Houston, I have found myself revisiting old recipes. The season change is never really fulfilled by the weather, so it always leads me to start changing the flavors I bake with to make it feel like Fall. Obviously, I’m talking about pumpkin spice.
You know when you’re sitting at home on the couch and a craving just comes over you for cake? Like a good piece of layer cake stacked tall with frosting and sprinkles and everything? This happens to me all the time, and since I don’t have an army to feed, I really just need one piece. The solution to this issue is simply to make one piece instead of an entire cake!
This past weekend one of my baking buddies (and overall good friend) got married to his best friend, Levi. They’re the type of people who are honestly friends with everyone, so the wedding was a huge assortment of friends and family from all over the country. It was casual, yet so personal, and Christian was sweet enough to ask me to bake their rehearsal dinner cake.

The weekend before last I joined my friends, along with the rest of America, to watch the Super Bowl. I made my version of Chuy’s classic jalapeño ranch dip and swapped out the sour cream for Greek yogurt. After about two hours of devouring it without caring, I realized there was nothing unhealthy about it anymore! Except for the pound of tortilla chips that accompanied it… Small victories. The initial plan for Maggie’s birthday had been to drive out to New Braunfels, float the river, and enjoy each others’ company. Then we got lazy, didn’t want to find a house to stay at, or drive all the way out there.
