Friday has really become my favorite day of the week. Not all Fridays, just every other. Every other week I get one Friday off and all week I start a to do list of things that’s longer than anyone could possibly achieve just for that day. Wake up at a decent hour, work out, bake cupcakes for a blog post, make decorations for a friend’s engagement party, finish sewing a dress, photograph it, and get an oil change. Reasonable.
Realistically, though, I end up sleeping in a little, maybe taking a run and then sitting out on the balcony with a smoothie bowl. I still try to fit everything in, don’t get me wrong, but not until I’ve eaten a really great and relaxed breakfast. As soon as I started eating smoothie bowls more often, I found myself buying a lot of granola. More often, I find myself out of granola, and that’s how I ended up learning how easy it was to make stove top granola.
A stove top granola consists of toasting the nuts and oats, cooling them, melting butter, brown sugar, and honey, and then adding the oats and nuts back into the pan to cook. I’ve made it so many times because it’s so easy, quick, and cheap! As soon as I received this maple and brown sugar steel cut microwave oatmeal from Degustabox, I thought it would make the perfect base for my granola and make it even easier to make!
Using just the oatmeal packets, another 1/4 cup of oats, some butter and honey, I made my own granola in 10 minutes! Check out the recipe below.
Quick Stove Top Maple and Brown Sugar Granola
1 Packet Microwaveable Oatmeal – Steel Cut Oats and Flax Maple and Brown Sugar flavor 1/4 cup Oats
1 Tbs. Butter
Drizzle of Honey or Maple Syrup
1. Pour your packet of microwaveable oatmeal and the oats into a pan on the stove over medium heat. Toast the oats until they begin to brown, or for about 5 minutes. Pour the oats out on to a piece of waxed paper or tinfoil.
2. Place your butter and a little honey or maple syrup into the pan and cook until melted. Add your oats back in to the pan and stir to combine. Pour the mixture back on to the waxed paper or tinfoil to cool for a few minutes. If you do not eat all of it at once, make sure to store it in a ziplock bag for up to a month.
