Let’s get back to those pancakes. The two items I was immediately drawn to in my Degustabox were the Elmhurst Harvest Chocolate Almond Milk and the JIF Cinnamon Peanut Butter. Almond milk is not a staple in my house normally, but I can get in to anything chocolate. I had also never tried cinnamon peanut butter before, but I may only buy cinnamon peanut butter from now on. SO DELICIOUS.
Chocolate and peanut butter, is there a better combination? When it comes to dessert, if it incorporates these two I will most definitely be trying it. I’m going to make a blanket statement and say that starting my day off with dessert for breakfast will result in a good day. Chocolate milk pancakes = a great excuse for dessert for breakfast.
Though the almond milk was chocolate flavored, I added some extra cocoa powder to amp it up. I’m not a fan of “lightly flavored” anything. Topping these beauties with a cinnamon peanut butter sauce only seemed natural to me, and I layered it ON. To finish them off I added a dash of sprinkles (why not) and had myself a seriously awesome start to the day!

Chocolate Milk Pancakes with Cinnamon Peanut Butter Sauce
Chocolate Milk Pancakes:
3/4 cup Elmhurst Harvest Chocolate Almond Milk
3 Tbs. Butter, melted
1 1/3 cups Flour
1/4 cup Cocoa Powder
1/3 cup Sugar
1 1/2 tsp. Baking Powder
1/4 tsp. Baking Soda
1/2 tsp. Salt
Cinnamon Peanut Butter Sauce:
1/2 cup JIF Cinnamon Peanut Butter
1/3 cup Elmhurst Harvest Chocolate Almond Milk
1. Whisk together in a bowl your chocolate almond milk, eggs, and melted butter. Add in your flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix until combined, but there are still some lumps in the batter. Over mixing will cause your pancakes to fall flat!
2. Heat up your griddle or a frying pan to medium heat and spray with a cooking spray, like Pam, to keep your pancakes from sticking. Pour your batter on to the griddle in 1/4 cup amounts. Allow to cook on one side for about two minutes and then flip. Cook for about another minute. Repeat with all of the batter.
3. Make your peanut butter sauce by simply heating up the peanut butter and the chocolate almond milk in a pan until it has formed a syrup consistency. You may have to add a little more milk to make the syrup runny enough to pour. Serve in a small pitcher with your pancake stacks. Add on chocolate chips, sprinkles, whipped cream, powdered sugar, extra cinnamon, or just eat them plain!
