Each week I head to the grocery store on Sunday and stock up for the week. On my sugar reducing kick, I ran to the produce section and stocked up on boxes upon boxes of fresh strawberries, they were on sale! By Wednesday I had eaten approximately half of them, and they started to look a little droopy. I could have frozen them for berry beet smoothies, but I already had a whole bag in there (notice my problem with over-buying produce). Looked like I was going to have to eat the entire box of strawberries in one night.

In another corner of my apartment, my mint plant was out of control. On the pro side, I have managed to not only not kill my mint plant, I amΒ really getting the hang of this gardening thing! On the con side, what in the world am I going to do with a million sprigs of mint? Drinks you say? Going to have to get a party going soon.

Well, I met in the middle on all accounts. Blending up the berries with a load of mint leaves, I was able to freeze ’em as Popsicles! These treats are pretty healthy, considering they’re mostly water and strawberries. I did end up adding simple syrup because otherwise when you freeze the berries a lot of the sweetness is hidden. With this recipe it may appear that you’re adding an insane amount of mint, but it’s really not overpowering. There’s a pop of fresh flavor that comes from mint that keeps you feeling cool even in the Summer heat.

These pops are refreshing, light, and perfect for a hot Summer day! You could even throw in some blueberries and make this a Fourth of July treat… why didn’t I think of that earlier? Looks like I’m going to have to make another batch… I hope you love this healthy treat!

3 Ingredient Strawberry Mint Pops

  • Servings: 6 Popsicles
  • Time: 5 mins plus freezing overnight
  • Difficulty: easy

Ingredients:

2-3 cups Strawberries
3 Mint Sprigs
3 oz. Simple Syrup or Water

Chop up your strawberries into small pieces and pull all of the mint leaves off of the sprigs. Combine them both with the simple syrup (or water if you’re looking to cut sugar!) in a food processor and pulse for about 30 seconds. Grab a Popsicle mold and pour the contents of the food processorΒ evenly into each. Freeze overnight.
