Smoothies are so sneaky. I absolutely love that I can throw tons of fruits and vegetables into a blender and all you taste is sweet yumminess. It’s like taking a salad and ending up with ice cream. If that isn’t everything you’ve ever wanted, I don’t know what is! As we head into a week of rain and more possible flooding here in Houston, I am stocking my body up with good things like this Berry Beet Smoothie (knowing I will be stocking it with beans and canned tuna if the power subsides…).

To be totally honest with you, the inspiration for this recipe came from Jamba Juice. They have a Berry Up-Beet smoothie that I absolutely love and wanted to recreate at home. The berry and beet combo is theirs, but I upped the veggie count by adding fresh spinach and added some lemon juice for zing. You’ll be amazed when you taste this smoothie that the ingredients could have made up a whole salad. The beet flavor is strong, but since they are so sweet they lend themselves well to an overall fruity flavor. The spinach is honestly undetectable – talk about sneaky!

I’ve been making this smoothie at least twice a week for months, and I never get sick of it. The flavors are fantastic and fresh, and you feel so energized after eating these power ingredients! Filled with antioxidants and vitamins, this smoothie is healthy and delicious. Get blending and drink your way through your veggies!

Berry Beet Smoothie

Ingredients:

1/2 cup Frozen Blueberries
1/2 cup Frozen Strawberries
1/2 cup Cooked Beets
1/2 cup Tropicana Farmstand Pomegranate Blueberry Juice
Handful of Spinach
1 Tbs. Lemon Juice

Cook your beets by peeling and chopping them into large chunks. Place them into a baking pan with a centimeter of water and cover with tinfoil. Bake the beets at 375 deg. F for 30 minutes, or until a fork can be easily pierced into them. Chop into small pieces and refrigerate any extra beets for later use.

Throw the beets, strawberries, blueberries, spinach, and juices into a blender. Mix on high for 30 seconds. Pour in to a glass and enjoy!
