Christmas morning is possibly the best morning of the entire year. My siblings and I have always lined up at the top of the stair (even as our horizontal growing has made it quite a tight squeeze), and then rushed down to the glorious site of the tree all lit up, hot chocolate on the stove, and presents galore! Though present opening takes a good 3 hours and chocolate and candy canes seem like enough breakfast to tide us over until dinner, a fabulous breakfast treat is never turned away.

Breakfast casseroles of eggs and french toast have been some of our favorites for years, but this year I have something special in mind. A new tart has come in to my life in the last two weeks, and I am dying to make it again.

A flaky crust is smothered in creamy mascarpone cheese, topped with sizzling bacon and popped into the oven. Gooey eggs are added at the last-minute, and a perfect Gourmet Egg Tart emerges from the oven with a smell that brings even the smallest of present openers to the table. So much flavor is packed into this tart, and it’s SO easy to make! Try it out this Christmas morning, and if you invite him for breakfast, Santa might even come back for a second round of pressies!

Simple Gourmet Egg Tart

Ingredients:

[Serves 3-4]
Puff Pastry (one sheet)
1/3 cup Mascarpone
1 Tbs. Chopped Chives
4-5 strips of Bacon
5-6 Eggs
1 Egg White for an egg wash
Salt and Pepper to season

1. Pre-heat the oven to 425 deg F. Take your puff pastry out of the freezer and let it defrost for about 10 minutes so you are able to unfold it. Place it on a greased baking sheet. Cut the edges off at about a 1/4″ and place on top of the new edges of the pasty square to make a border. Prick the center of the pastry with a fork many times (this will keep your pastry from bubbling up in the middle).

2. Spread your mascarpone cheese over the pastry in a thin layer. Sprinkle the chives on top and lay the bacon down. Brush the edges of the pastry border with the egg wash to give it a nice brown crust when it bakes.

3. Place the tart into the oven for 10 minutes. Remove the tart and crack the eggs on top carefully so that you don’t break the yolks. Return tart to the oven for another 10 minutes. Remove the tart and season with salt, pepper, and a few more chives for garnish.
