Strawberry Mint French Toast

There’s just something about Sunday mornings that inspires me to make brunch. Maybe it’s the openness of the day, or the fact that I’ve spent the last couple of nights splurging on dinners out, but it seems to happen just about every week. Although I’m smitten with just about every breakfast food imaginable, French toast is my favorite.

Truth be told, French toast is essentially just eggs and toast dusted with some spices. It’s the toppings that really knock it out of the park. Classic maple syrup is always a delicious sweet choice, but I’ve been really into berries lately since fruit is a whole lot healthier and has been in season! This Strawberry Mint French Toast is definitely the best combo I’ve come up with.

The strawberries work perfectly as a sweet base for the syrup, while the mint balances the sweetness of the dish with a fresh pop of flavor! Serve with a cup of coffee, Sunday morning cartoons, and a mimosa with mint if you’re feeling feisty!

(Recipe serves 4)

Strawberry Mint Sauce:

1 lb. Strawberries
2 tsp. Fresh mint, chopped
1/4 cup Sugar

Start by washing and slicing up all of the strawberries. Finely chop up your mint. Stir up the strawberries and mint with the sugar in a large saucepan. Heat the pan up to medium low and stir until the sugar has dissolved. The aroma will fill up your sunny kitchen! This should take about 5 minutes. Reduce the heat to low and simmer until ready to serve.

Toast:

1 Loaf French Bread
6-8 Eggs (depending on their size)
1/4 cup Milk
1 Tbs. Cinnamon
1 tsp. Nutmeg
1 tsp. Salt
Butter for the pan

Slice up your loaf of bread into 1/2 – 1 inch thick slices. Whisk together in a large bowl the eggs, milk, cinnamon, nutmeg, and salt for about a minute. Take your slices of bread and soak each side in the egg mixture, making sure to let the bread get nice and mushy!

Heat up a large skillet, or grill, to medium high. Melt a small amount of butter in the bottom of the skillet to keep the toasts from sticking.

Place each soaked piece of bread into the skillet and toast until golden brown on each side, about 2-3 minutes per side. Make sure to keep an eye on your pan because sometimes it will heat up too high the longer it sits on the stove and burn your bread! Once your bread is all toasted, keep it toasty in the oven! Set it to 200 degrees F just to keep the bread warm.

To complete the French toast, serve a few pieces of toast on a plate, dust with powdered sugar, and drizzle with a generous helping of Strawberry Mint sauce! Add a sprig of mint and your guests may even leave you a tip!

  1. Yummm I just tried my hand at french toast the other weekend. Now, I’ll have to give this recipe a go! Sundays make me crazy for brunch as well!!
