The Mongoose v. Cobra PB + B Recipe

One of my favorite bars in Houston is  Mongoose vs. Cobra. The small warehouse-esque building shows off it’s original exposed brick walls, complemented by warm wooden tables for resting a hand crafted cocktail on. They have amazing drinks, my favorite being Gold Rush #2 (not sure what happened to #1), and quite the spread of food being served until 1 AM! The food, oh the food… They are famous for their giant (face sized) pretzel which comes with house mustard and pickled everything. But what my friends and I have newly discovered is the PB + B. This was my first experience with the beautiful concoction: pure joy.

Honestly, it was the perfect plate for a hungry girl after a couple of drinks, but I knew I couldn’t make this sandwich a habit. The monster comes loaded with peanut butter, drunken golden raisins, a generous drizzle of honey, and greasy bacon all mushed between two thick slices of jalapeño challah bread….Take a moment, I understand. Some crunchy Granny Smith apples come on the side as a nice contrast to the sticky sandwich, but they in no way make this delight incredibly healthy.

Be indulgent! Just go for it! Or as the kids these days say, YOLO! …. But, wait! The sandwich doesn’t have to be so unhealthy! I suggest that you visit Mongoose once to at least try the sinful version, because it’s amazing, but then you can whip up this slightly healthier version on your own at home.

Ingredients:

(Makes 1 sandwich)
2 slices of Whole Wheat Toast
3 slices of Turkey Bacon
A handful of Golden Raisins
3 Tbs. of Peanut Butter
2 Tbs. of Honey

Throw your wheat bread in the toaster and slap that turkey bacon on the griddle! These are the only two parts that could cause you any grief. I sometimes throw a smidge of oil in the pan just to make sure my turkey bacon doesn’t stick, but if your pan is of the non-stick variety you shouldn’t have any trouble flipping the bacon to crisp it up. Once the bacon is all sizzled up, throw it on a plate with some paper towels to dry.

Meanwhile, start to assemble your sandwich. Slather on the peanut butter. Sprinkle on the golden raisins. Generously drizzle the honey (Might I suggest lots of honey). Place on your turkey bacon. Top with another slice of bread.

Tah dah! You have made the magically healthy (ish) version of the PB + B! The wheat bread and turkey bacon are the biggest changes I made to the recipe. Peanut butter isn’t super healthy, but it isn’t necessarily terrible for you, and I love it, so just take the stairs a couple of extra times today. 😉
